ROASTED TOMATILLO SALSA
If you have yet to discover tomatillos (hopefully not, because that would mean you haven’t tried our tomatillo ranch!), let me be the first to tell you you’re really missing out. Hiding under that papery skin is a zippy little fruit that’s gonna change your salsa game. In this recipe, we roast the tomatillos, garlic, and a lime to complicate their flavors and embolden the salsa. The recipe is simple and definitely worth a try! Try the salsa atop any taco, or just enjoy it with chips!
Roasted Tomatillo Salsa
Ingredients

8 ripe tomatillos, papery skins removed, quartered

1/2 medium yellow onion, cut into chunks

2 large cloves garlic, peeled and lightly smashed with the side of a knife

2 limes, halved

1 serrano or jalapeño pepper, seeds and ribs removed

Handful of fresh cilantro

Sugar to taste

Kosher salt to taste
Method

Preheat oven to 450º. Line a rimmed baking sheet with foil, spray lightly with olive oil, and place tomatillos, onion, garlic, pepper, and 1 lime facedown on the baking sheet.

Roast ingredients for 10-15 minutes, turning halfway through, or just long enough to get a nice char on the ingredients. Avoid roasting too long, as it will cause the tomatillos to turn to mush.

Remove from oven and transfer half of the tomatillos, onions, garlic, pepper, and juice of half a roasted lime to food processor (this will need to be done in two batches, as there isn’t enough space in a food processor for everything at once). Add half the cilantro, half the juice of the remaining fresh (unroasted) lime, and a sprinkle of salt.

Carefully pulse the food processor, processing just until combined but still slightly chunky. Taste, and add a little sugar or more salt if necessary. Transfer first batch of salsa to a bowl and repeat with remaining ingredients.

Enjoy salsa atop tacos or with chips!
NOTE:
Do not attempt this recipe with a blender, or you’ll end up with soup. If you do not already own one, it’s worth investing in a food processor, as they are useful in tons of recipes and are not very expensive.
