GOLDEN GRAHAMS S’MORES BARS

When my husband and I were newlyweds I made these for the first time, and they have been his favorite dessert ever since. Any time we are asked to bring a dessert somewhere, this is what he wants me to bring. He LOVES them. In fact, I felt really guilty making them this week, because he is currently off sugar and couldn’t have any!

If you love s’mores, this might just become your new favorite dessert. And the best part is that they take less than 10 minutes to make! A couple important things to note:

  • Put your chocolate chips in the freezer before you start to keep them from melting when combined with the hot melted marshmallows.
  • Don’t add your cereal to the marshmallows in the hot pot, put your cereal in a bowl and dump the marshmallows on top of it…This will also ensure your chocolate chips keep their form. The first time I made this I skipped those two steps cause they didn’t sound that important. No one warned me how ugly it would look with my chocolate chips completely melted!
  • They sell two different sized bags of mini marshmallows (10 oz. and 16 oz.). You want the larger bag for this recipe.

yields one 9×13 inch pan

Ingredients:

  • 8 cups Golden Grahams Cereal
  • 1 16 oz. bag mini marshmallows
  • 6 T butter
  • 1 teaspoon vanilla (optional)
  • 1 cup chocolate chips (semi-sweet or milk chocolate)

Directions:

  1. Put chocolate chips in the freezer until you are ready to use them. You want them to be cold so they will keep their shape when combined with the hot melted marshmallows.
  2. Prepare a 9×13 inch baking dish by spraying it with nonstick cooking spray. Set aside.
  3. Measure cereal out into a large bowl.
  4. Open bag of marshmallows and set aside 1 1/4 cups.
  5. In a large pot, melt butter. Once melted, add the remaining mini marshmallows to pot and stir until fully melted. Mix in vanilla.
  6. Pour melted marshmallow mixture over cereal and stir until evenly combined. Add in reserved 1 1/4 cup of marshmallows and the cold chocolate chips and stir again.
  7. Gently pour mixture into greased 9×13 pan. Do not press the mixture too tightly into the pan or melted marshmallows will lose their chewiness. Just gently spread it out.
  8. Let cool slightly before cutting and serving.
