CARMELITA BARS

I have always been a treat girl, and guys…this is one of the yummiest treats EVER. A chewy oatmeal cookie crust, sprinkled with milk chocolate chips, drizzled with caramel sauce, and topped with more cookie crumbles. HEAVEN. And the best part is that they are so easy to make and the recipe makes a huge pan!

You start by throwing together that cookie crumble, which just consists of oats, flour, brown sugar, baking soda, salt, and butter. And it’s divine. Once that’s good and mixed, you pat 3/4 of it into the bottom of a jelly roll style pan. Then you pop it into your oven to bake a little.

Once it’s out and has cooled a little, you take an entire bag of your favorite milk chocolate chips (I’m a sucker for Guittard or Ghiradelli) and sprinkle it evenly over the entire pan.

Chocolate Chip Layer CarmelitasNow, open a new jar of Mrs. Richardson’s Butterscotch Caramel Sauce and pour it over top of those chocolate chips (the brand is pretty important here because this sauce is a lot thicker than most store-bought caramel sauces, but if you can’t find that brand, just substitute it for 17 oz. of another brand)! I usually have to take off the lid and warm it for 10-15 seconds in the microwave to get it to pour easily.

Mrs Richardsons CaramelNow, take that remaining 1/4 of your cookie crumble and sprinkle it on top of the caramel.

Unbaked CaramelitasMmmm, can you even handle how good that looks? Now put the pan back in your oven for about 10-12 minutes!

Once your bars are done cooking, let them cool completely before cutting them! I like to stick mine in the fridge to harden them up, but not for too long, cause then they will be too hard to cut!

Baked CarmelitasIf you’ve never tried these, you are seriously in for a treat! People ask me for this recipe every time I make them, and now it’s all yours! Enjoy!

Carmelita Bars

Ingredients

  • 2 c butter, softened
  • 2 ¼ c brown sugar
  • 3 c flour
  • 3 c oatmeal
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 pkg milk chocolate chips, chilled
  • 1 jar Mrs. Richardson’s caramel sauce

Directions:

  1. Mix butter, sugar, flour, oatmeal, salt, and soda.
  2. Pat ¾ of the mixture into a jelly-roll style cookie sheet.
  3. Bake for 8 minutes at 350.
  4. Let cool slightly.
  5. Top with cold chocolate chips and caramel sauce, and then crumble the remaining mixture over top.
  6. Bake at 350 for 10-12 minutes.
  7. Let cool completely before cutting into squares and removing from the pan. I prefer to serve mine chilled, but they are delicious room temperature as well!
