APRICOT CHICKEN

Growing up, this was my very favorite dinner that my mom would make (okay, it still is!). She made it about once a week, and I can’t blame her for that! It’s amazing, and believe it or not, only three ingredients! I know it sounds too good to be true, but it really is delicious. I promise it’s worth a try! It’s the perfect addition to your weekly lineup for those nights when there’s no time for fancy fiddling in the kitchen, but you want something a little better than cereal. My husband and kids gobble this chicken up (and the leftovers are so good too)!
Apricot Chicken

Ingredients
- 1 pkg Lipton onion soup mix
- 1 bottle Russian dressing (do not substitute thousand island here!)*
- 1 10-oz. jar apricot preserves
- 1 2.5-lb. bag boneless, skinless chicken breasts (or chicken breast tenderloins)
Method
- Preheat oven to 375º.
- In medium bowl, combine onion soup mix, Russian dressing, and apricot preserves until well-incorporated.
- Spray a large casserole dish lightly with oil, then pour about 1/3 of the sauce into the bottom of the dish. Place chicken in dish, then cover with remaining sauce, ensuring each piece of chicken is well-coated.
- Bake about 20-25 minutes, flipping chicken over halfway through, or until chicken is cooked through.*
- Remove from oven and let rest 5-10 minutes. Serve with rice and a vegetable, and be sure to pour the sauce over the chicken and rice!
*NOTES:
- Russian dressing can be a little tricky to find, but most large grocers should carry it. I can always find it at my local Safeway, but Target does not sell it.
- If using tenderloins, cook time will be less. Mine were done after only 15 minutes.
