CHICKEN TACO MARINADE

It’s no secret around here that I love me a good taco. But who the heck doesn’t?! This the marinade to use when you’re craving a classic chicken taco! It comes together super quickly, and then all you have to do is let it sit for a few hours, and then cook up your chicken. We grilled our meat here, but you can just as easily cook it on the stove. However you decide to cook it, you will be left with succulent, flavorful meat that is the perfect base for whatever kind of taco you want to build!

Chicken Taco Marinade
yield approximately 1.5 c marinade

Ingredients:

  • 1/3 c lime juice

  • Zest of 1 lime

  • Large handful cilantro

  • 2 cloves garlic, peeled

  • 1.5 tsp chili powder

  • 1/4 c + 1 tbsp orange juice

  • 1 tbsp brown sugar

  • 1 tbsp soy sauce

  • 1/4 tsp cumin

  • 1/3 c olive oil

  • 1/2-1 tsp kosher salt

Directions:

  1. Combine all ingredients except olive oil in a blender, and blend until smooth.

  2. With blender still running, slowly pour in the olive oil, and continue to blend until well-combined. Taste, and add more salt if necessary.

  3. Pour marinade into a large gallon-sized ziplock bag. Add thawed chicken (or steak!), and marinate for at least 1 hour and up to 24 hours. When ready to cook, wipe excess marinade off meat, and cook chicken as usual over a grill or stovetop. Once cooked, let meat rest 10 minutes, then cut into strips or chunks and enjoy in a tortilla or rice bowl. Pair with our best salsa and guacamole!
