RICE KRISPIES TREATS

This recipe is a go-to in our house. It’s hard to beat a dessert that only requires a few ingredients and about 5 minutes of your time. Rice Krispies Treats have been a favorite dessert of mine since I was a little girl, but there is a wrong and right way to make them, and trust me—the recipe on the back of the box is not the right way. I finally figured out the perfect ratio of marshmallows to rice krispies and discovered a few fool-proof tricks. Not to toot my own horn or anything, but these are the best ever.

RICE KRISPIES TREATS—THE WAY THEY SHOULD BE
yields a 9×13 inch pan

Ingredients:

  • 6 T butter

  • 1 16 oz. bag mini marshmallows (there are two bag sizes of mini marshmallows, get the 16 oz. size or buy two of the 10 oz. bags and measure out 8 1/4 cups)

  • 1/2 t vanilla extract

  • 6 cups rice krispies

Directions

  1. Measure out 1 1/4 cup of your mini marshmallows and set aside.
  2. Spray a 9×13 inch pan with cooking spray and set next to your stove.
  3. In a large pot, melt the butter. Once melted, stir in remaining 7 cups of mini marshmallows and continue to stir until fully melted.
  4. Add in vanilla and almond extracts and stir to combine. Remove from heat.
  5. Quickly add in rice krispies cereal to pot of melted marshmallows and gently stir to combine.
  6. Add additional cup of mini marshmallows into the pot and place pot back over the barely warm burner (do not turn the burner back on, it should still be slightly warm). Stir until additional marshmallows just barely start to melt.
  7. Pour rice krispies treats mixture into the 9×13 inch pan and gently spread. DO NOT PRESS the mixture into the pan, or your rice krispies treats will lose their chewiness!
  8. Let cool before cutting!
