HONEY GARLIC SALMON

A few weeks ago I bought some fresh salmon at Trader Joe’s with no clue what I was gonna do with it. I came across this recipe from Cafe Delites and it drew me in with its simplicity and the bomb list of ingredients. I have a hard time saying no to anything that includes lemon, garlic, honey, and soy sauce! Not to mention, those are ingredients I always have on hand!
You start by cooking your sauce until the flavors combine, then you put your salmon directly into it and cook it through. At the end, you use your broiler to caramelize the sauce and give the salmon a crispy crust…and the end result is perfection. Honey Garlic Salmon

Ingredients
- 4 salmon fillets (about 1/2 pound each), skin removed
- Salt and pepper, to taste
- 1/2 tsp paprika (mild, sweet, or smokey)
- 2 T butter
- 4 cloves garlic, finely chopped or minced
- 4 T honey
- 1 T water
- 2 tsp soy sauce
- 1 T fresh squeezed lemon juice, (plus extra to serve)
- Lemon wedges to serve
Instructions
- Arrange oven shelf to the middle of your oven. Preheat oven to broil/grill settings on medium heat.
- Season salmon with salt, pepper, and paprika. Set aside.
- Heat the butter in a cast-iron skillet or stainless steel pan over medium-high heat until melted. Add the garlic and sauté for about a minute, until fragrant. Pour in the honey, water and soy sauce and allow the flavors to heat through and combine. Add in the lemon juice; stir well to combine all of the flavors together.
- Add the salmon to the pan and place a couple lemon slices around them in the sauce. Cook each fillet for 3-4 minutes, or until slightly golden, basting with the sauces as it cooks. Season with salt and pepper, to taste.
- Baste salmon one more time then transfer the pan to your oven to broil for 5-6 minutes, or until the tops of the salmon are nicely charred, and the salmon is cooked to your liking.
- To serve, drizzle with the sauce and a squeeze of lemon juice. Serve over rice with steamed or roasted vegetables and/or a salad.
