TOMATILLO LIME RANCH

I feel like everybody and their mom has a recipe for this stuff. I’ve tried a whole bunch, and this one is my personal favorite. Give it a try if you still haven’t found one that makes your taste buds sing! I’m not going to pretend like this is the same as Cafe Rio’s, because it’s not (I’m pretty sure theirs uses mayonnaise, which you’re more than welcome to sub for here instead of the yogurt if you feel so inclined…I personally don’t think it needs it). This twist is healthier, and if you ask me, equally delicious. It’s creamy, limey, and packs an incredible flavor punch! I have a hard time not licking the bowl. And the best part about this dressing is its versatility–throw it on tacos, salads, loaded nachos, etc., and you’re sitting pretty. I have so many recipes that I use this stuff on (many of them pending!), so I’m never sad about the leftovers!

Tomatillo Lime Ranch

Ingredients:

  • 3 tomatillos, husks removed and rinsed*
  • 2 large cloves garlic, peeled
  • 1 packet buttermilk ranch dressing seasoning
  • 1 large handful cilantro (leaves and stems)
  • juice of 1-2 limes
  • 1 c fat-free plain greek yogurt
  • 1/2 an avocado
  • 1/2 a jalapeño, seeded (optional)

Method:

  1. Place all ingredients in blender and process until smooth. Add a little more yogurt if too thick, add more avocado if too thin. You can also add a little milk if you prefer a runnier dressing (start with 1/8 cup).

NOTE: If your grocery store doesn’t sell tomatillos (sometimes they’re easier to find in the summer), you can use 1/4-1/3 c salsa verde and only 1/2 a lime instead. But be warned, your final product won’t taste as fresh and the flavor will be different.tomatillo+ranch 2.jpg
