They. Are. So. Good. I&#8217;m so glad I thought to try throwing sweet potatoes on my tacos, because their sweetness contrasts gorgeously with the zesty guac and tangy yogurt. Trust me, these rustic tacos are a welcome change to your standard Taco Tuesday. Even if they sound a little odd to you (or you&#8217;re not a huge sweet potato fan), TRY THESE! They&#8217;ve instantly converted everyone I&#8217;ve fed them to.<\/p>\n<div class=\"\n          image-block-outer-wrapper\n          layout-caption-below\n          design-layout-inline\n\n        \" data-test=\"image-block-inline-outer-wrapper\"><\/p>\n<figure class=\"\n              sqs-block-image-figure\n              intrinsic\n            \" style=\"max-width: 2500px;\"><\/p>\n<div class=\"image-block-wrapper\" data-animation-role=\"image\" data-animation-override=\"\">\n<p><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1527016956665-MPKYC5KA9E6H4T0VHFB9\/Sweet+Potato+Tacos-3.jpg\" alt=\"Sweet Potato Tacos-3.jpg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1527016956665-MPKYC5KA9E6H4T0VHFB9\/Sweet+Potato+Tacos-3.jpg\" data-image-dimensions=\"2500x2117\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5b046dfa562fa7bfe348fbca\" data-type=\"image\" \/><\/p>\n<\/div>\n<\/figure>\n<\/div>\n<p><strong>Roasted Sweet Potato Chicken Tacos<\/strong><br \/>\n<em>serves 4<\/em><\/p>\n<p><strong><em>For the Sweet Potatoes<\/em><\/strong><strong><em>:<\/em><\/strong><br \/>\nIngredients<\/p>\n<ul style=\"margin-left: 40px;\">\n<li>1 very large sweet potato, or 2 medium, peeled and diced into 1\/2-in. cubes<\/li>\n<li>1 large yellow onion, halved then sliced<\/li>\n<li>1 c cilantro, roughly chopped<\/li>\n<li>the juice of 1 lime<\/li>\n<li>2 medium cloves garlic, minced (you can also use about 1\/2 tsp garlic powder in a pinch)<\/li>\n<li>1 tsp kosher salt (plus more to taste)<\/li>\n<li>1\/2 tsp freshly ground black pepper<\/li>\n<li>about 3-4 tbsp olive oil<\/li>\n<\/ul>\n<p>Method<\/p>\n<ol>\n<li>Preheat oven to 425\u00ba. Line large jelly roll pan (baking sheet with sides)\u00a0with foil.<\/li>\n<li>Toss all ingredients together in a large bowl, adding enough olive oil to generously coat (but not overwhelm) the potatoes.<\/li>\n<li>Pour potatoes and onions onto pan, ensuring everything is making contact with the pan&#8217;s surface. Depending on the size of your potatoes, you may end up with a bit too much to fit on one pan, in which case you can divide the mixture between two pans.<\/li>\n<li>Roast about 20 minutes, stirring halfway through, or until sweet potatoes are fork tender and lightly charred.<\/li>\n<\/ol>\n<p><strong><em>For the Chicken:<\/em><\/strong><br \/>\nIngredients<\/p>\n<ul style=\"margin-left: 40px;\">\n<li>about 1.5lbs boneless, skinless chicken breast or tenderloins<\/li>\n<li>1 12-oz. jar mild salsa verde (I love <a href=\"https:\/\/www.traderjoes.com\/fearless-flyer\/article\/3573\" target=\"_blank\" rel=\"noopener\">this one<\/a>)<\/li>\n<li>1 tsp kosher salt<\/li>\n<li>1\/2-1 c water<\/li>\n<\/ul>\n<p>Method<\/p>\n<ol>\n<li>While sweet potatoes are roasting, place chicken in a large saucepan and cover with salsa verde. Stir everything around a little to ensure the chicken is evenly coated.<\/li>\n<li>Add salt and just enough water to cover the chicken about 2\/3 of the way. Stir a bit more to incorporate.<\/li>\n<li>Bring to boil over medium-high heat. Once boiling, cover pot and reduce heat to low. Allow chicken to simmer about 10 minutes or until cooked through and can be easily shredded with a fork.<\/li>\n<li>Remove chicken to a medium bowl and shred.<\/li>\n<\/ol>\n<p><strong><em>Assembly and Additional Ingredients<\/em><\/strong><\/p>\n<ul style=\"margin-left: 40px;\">\n<li>Tortillas<\/li>\n<li>1 can black beans<\/li>\n<li>Shredded mexican cheese<\/li>\n<li>Fresh <a href=\"https:\/\/www.simmerandsliceblog.com\/home\/2018\/5\/8\/fresh-guacamole\" target=\"_blank\" rel=\"noopener\">guacamole<\/a>\u00a0(I omit the tomatoes,\u00a0red onion, and jalape\u00f1o for these, because I like my guac smooth)<\/li>\n<li>Sour cream or fat-free <strong>plain<\/strong> greek yogurt<\/li>\n<\/ul>\n<ol>\n<li>Heat your favorite tortillas (Trader Joe&#8217;s Truly Handmade Flour Tortillas are definitely my favorite, but I used corn tortillas in the tacos you see here, and they were also good) on a lightly buttered griddle or skillet over medium-low heat. Add some shredded mexican cheese, chicken, sweet potato\/onion mix, and a scoop of black beans, and heat until cheese is melted.<\/li>\n<li>Top tacos with fresh <a href=\"https:\/\/www.simmerandsliceblog.com\/home\/2018\/5\/8\/fresh-guacamole\" target=\"_blank\" rel=\"noopener\">guacamole<\/a>\u00a0and sour cream (I personally prefer fat-free plain Greek yogurt over the sour cream, because it&#8217;s healthier, and I can&#8217;t taste a real difference!
