I have tomatoes coming out my ears! Luckily, both my kids LOVE tomatoes, so I\u2019m not eating them alone! Yesterday I found my two-year-old son on the counter just downing a huge tomato like it was a peach! Smart kid, if you ask me. There are few things better than a sun-ripened garden tomato. Unfortunately, we can\u2019t possibly just EAT this many tomatoes, even if we were ONLY eating tomatoes for EVERY meal.<\/p>\n<p style=\"white-space: pre-wrap;\">Enter salsa recipe.<\/p>\n<p style=\"white-space: pre-wrap;\">This recipe has been in our family since I was a little girl. My dad made it up when we were young and we make it for every party\/gathering\/Mexican-themed dinner because it\u2019s the BEST. Eat it with some lime Tostitos and you\u2019re set. The best part? It\u2019s so quick and easy to make! The best method is to use a food processor, but you can also finely chop the ingredients by hand if you don\u2019t have one. Just be careful not to over mix or your salsa will be extremely watery. Just pulse the processor a few times! Don\u2019t use a blender or you\u2019ll get tomato soup!<\/p>\n<div class=\"\n          image-block-outer-wrapper\n          layout-caption-below\n          design-layout-inline\n          combination-animation-fade-in\n          individual-animation-none\n          individual-text-animation-none\n        \" data-test=\"image-block-inline-outer-wrapper\"><\/p>\n<figure class=\"\n              sqs-block-image-figure\n              intrinsic\n            \" style=\"max-width: 2500px;\"><\/p>\n<div class=\"image-block-wrapper\" data-animation-role=\"image\" data-animation-override=\"\">\n<p><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1537228275058-92T2S5IKZ66GBV7GKZ4L\/fullsizeoutput_132b.jpeg\" alt=\"fullsizeoutput_132b.jpeg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1537228275058-92T2S5IKZ66GBV7GKZ4L\/fullsizeoutput_132b.jpeg\" data-image-dimensions=\"2500x3751\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5ba03dec4d7a9c612fe8c832\" data-type=\"image\" \/><\/p>\n<\/div>\n<\/figure>\n<\/div>\n<p style=\"white-space: pre-wrap;\"><strong>Fresh Tomato Salsa<\/strong><\/p>\n<p style=\"white-space: pre-wrap;\">Ingredients<\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">8 ripe Roma tomatoes (seeds removed and quartered)<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/2 medium yellow onion, roughly chopped<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 large cloves garlic, smashed, peeled, and roughly chopped<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Juice of 2-3 limes, depending on volume of juice extracted<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 Serrano or jalape\u00f1o pepper, seeds and ribs removed (more if you like it spicy)<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Handful of fresh cilantro leaves<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 tsp sugar<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Salt to taste<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\">Directions<\/p>\n<p style=\"white-space: pre-wrap;\">1. You will need to make this recipe in two batches, so start by putting half the above ingredients in a food processor and give it a few pulses. The texture should be still slightly chunky.<\/p>\n<p style=\"white-space: pre-wrap;\">2. Taste and adjust sugar and salt as necessary.<\/p>\n<p style=\"white-space: pre-wrap;\">3. Repeat with the remaining ingredients, adding more or less jalape\u00f1o\/serrano pepper depending on how spicy you like it.<\/p>\n<p style=\"white-space: pre-wrap;\">4.
