Hiding under that papery skin is a zippy little fruit that\u2019s gonna change your salsa game. In this recipe, we roast the tomatillos, garlic, <em>and<\/em> a lime to complicate their flavors and embolden the salsa. The recipe is simple and definitely worth a try! Try the salsa atop any <a href=\"\/home?tag=tacos\">taco<\/a>, or just enjoy it with chips!<\/p>\n<div class=\"\n          image-block-outer-wrapper\n          layout-caption-below\n          design-layout-inline\n          combination-animation-none\n          individual-animation-none\n          individual-text-animation-none\n        \" data-test=\"image-block-inline-outer-wrapper\"><\/p>\n<figure class=\"\n              sqs-block-image-figure\n              intrinsic\n            \" style=\"max-width: 2500px;\"><\/p>\n<div class=\"image-block-wrapper\" data-animation-role=\"image\">\n<p><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1536181403496-5VPE27SK9XJJ2DK4BB17\/fullsizeoutput_12fc.jpeg\" alt=\"fullsizeoutput_12fc.jpeg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1536181403496-5VPE27SK9XJJ2DK4BB17\/fullsizeoutput_12fc.jpeg\" data-image-dimensions=\"2500x2030\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5b904496aa4a99edb1932a50\" data-type=\"image\" \/><\/p>\n<\/div>\n<\/figure>\n<\/div>\n<p style=\"white-space: pre-wrap;\"><strong>Roasted Tomatillo Salsa<\/strong><\/p>\n<p>Ingredients<\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">8 ripe tomatillos, papery skins removed, quartered<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/2 medium yellow onion, cut into chunks<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 large cloves garlic, peeled and lightly smashed with the side of a knife<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 limes, halved<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 serrano or jalape\u00f1o pepper, seeds and ribs removed<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Handful of fresh cilantro<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Sugar to taste<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Kosher salt to taste<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\">Method<\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">Preheat oven to 450\u00ba. Line a rimmed baking sheet with foil, spray lightly with olive oil, and place tomatillos, onion, garlic, pepper, and 1 lime facedown on the baking sheet.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Roast ingredients for 10-15 minutes, turning halfway through, or just long enough to get a nice char on the ingredients. Avoid roasting too long, as it will cause the tomatillos to turn to mush.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Remove from oven and transfer half of the tomatillos, onions, garlic, pepper, and juice of half a roasted lime to food processor (this will need to be done in two batches, as there isn\u2019t enough space in a food processor for everything at once). Add half the cilantro, half the juice of the remaining fresh (unroasted) lime, and a sprinkle of salt.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Carefully pulse the food processor, processing just until combined but still slightly chunky. Taste, and add a little sugar or more salt if necessary. Transfer first batch of salsa to a bowl and repeat with remaining ingredients.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Enjoy salsa atop tacos or with chips!<\/p>\n<\/li>\n<\/ol>\n<p style=\"white-space: pre-wrap;\"><strong>NOTE:<\/strong><\/p>\n<p style=\"white-space: pre-wrap;\">Do not attempt this recipe with a blender, or you\u2019ll end up with soup.
