Whyyyy is there no substitute for it?! Trust me, there isn\u2019t. I checked. Anyway, this is my very favorite recipe for pumpkin bread, and it\u2019s soon to be yours too. The recipe makes 3 large loaves, which sounds like too many for a normal human, but it\u2019s not. Give a loaf or two away, or keep them and shamelessly devour them all. I won\u2019t tell. They also freeze extremely well, so there\u2019s no excuse not to make them! The most important step in this recipe is to wrap the loaves tightly in foil while they\u2019re still warm! This locks in the moisture that is trying to escape in the form of steam, and keeps them (I\u2019m sorry) <em>super<\/em> <em>moist<\/em>. I like to add chocolate chips to one or two of the loaves too. And definitely don\u2019t skip the cinnamon-sugar topping, either! It creates the most delicious crust on the top of the bread and really takes it to the next level. Let us know if you try this one out!<\/p>\n<p><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1540616597117-OPVS6SD76FH8HUE8W4Z3\/IMG_8823.jpg\" alt=\"IMG_8823.jpg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1540616597117-OPVS6SD76FH8HUE8W4Z3\/IMG_8823.jpg\" data-image-dimensions=\"2500x1667\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5bd3f190419202dce25fb0e8\" data-type=\"image\" \/><\/p>\n<p style=\"white-space: pre-wrap;\"><strong>Perfect Pumpkin Bread<\/strong><br \/>\n<em>yields 3 9-inch loaves<\/em><\/p>\n<p style=\"white-space: pre-wrap;\"><strong>Ingredients:<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">3 c sugar<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">3 1\/3 c flour<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 t baking soda<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/2 tbsp baking powder<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 1\/2 tsp salt<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 tsp nutmeg<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 tsp cloves<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 tsp cinnamon<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">4 eggs<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 15-oz can pumpkin<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 c vegetable oil<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 c water<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Chocolate chips (if desired)<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\"><em>Cinnamon-Sugar Topping:<\/em><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">1\/2 c sugar<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 tsp cinnamon<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/2 tsp nutmeg<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\"><strong>Method:<\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">Preheat oven to 350\u00ba. Grease and flour 3 9-inch loaf pans.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Combine sugar through cinnamon in the bowl of a stand mixer. Mix on low until combined. Add wet ingredients to dry ingredients all at once. If using, add desired amount of chocolate chips.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Divide batter among loaf pans. In a small bowl, combine ingredients for cinnamon-sugar topping. Generously sprinkle topping directly on top of the batter in each pan.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Place pans on the same rack in the middle of the oven, about 1 inch apart. Bake 45 minutes-1 hour, or until toothpick inserted into the center of each loaf comes out with moist crumbs (but no wet batter).
