I could honestly eat soup every day in the fall and winter. It\u2019s delicious, comforting, great as leftovers, and so dang easy to make!<\/p>\n<p style=\"white-space: pre-wrap;\">White chicken chili has long been one of my favorites. In fact, I usually prefer it to traditional chili, though they are so different that it\u2019s hard to really compare them. This recipe is lighter, with a limey chicken broth base, an assortment of white beans, some saut\u00e9ed onions, and shredded chicken. Load it up with your favorite toppings like fresh avocado and cilantro, Mexican cheese, chips, and sour cream and you\u2019re sure to have a new family favorite recipe!<\/p>\n<div class=\"\n          image-block-outer-wrapper\n          layout-caption-below\n          design-layout-inline\n          combination-animation-none\n          individual-animation-none\n          individual-text-animation-none\n        \" data-test=\"image-block-inline-outer-wrapper\"><\/p>\n<figure class=\"\n              sqs-block-image-figure\n              intrinsic\n            \" style=\"max-width: 2500px;\"><\/p>\n<div class=\"image-block-wrapper\" data-animation-role=\"image\">\n<p><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1541132660754-DI1F6AMK08F8X9FU30LH\/fullsizeoutput_1540.jpeg\" alt=\"fullsizeoutput_1540.jpeg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1541132660754-DI1F6AMK08F8X9FU30LH\/fullsizeoutput_1540.jpeg\" data-image-dimensions=\"2500x1794\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5bdbd16e4ae237913ea7e3b0\" data-type=\"image\" \/><\/p>\n<\/div>\n<\/figure>\n<\/div>\n<p style=\"white-space: pre-wrap;\"><strong>White Chicken Chili<\/strong><br \/>\n<em>serves 4<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">2 chicken breasts, cooked and shredded<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 sweet or yellow onion, diced<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 cloves garlic, crushed or minced<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">32 oz chicken broth<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">2 cans white beans, drained and rinsed (navy, great northern, etc.)<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 1\/2 c salsa verde<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 t cumin<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1 t salt (might need slightly more if using low-sodium chicken broth)<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">dash of black pepper<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/4 c fresh lime juice (juice from 1-2 limes)<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">1\/4 c chopped cilantro<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\"><strong>Toppings<\/strong><\/p>\n<ul data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">Avocado<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Fresh cilantro<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Lime wedges<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Sour Cream<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Shredded cheese<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Tortilla chips<\/p>\n<\/li>\n<\/ul>\n<p style=\"white-space: pre-wrap;\"><strong>Directions:<\/strong><\/p>\n<ol data-rte-list=\"default\">\n<li>\n<p style=\"white-space: pre-wrap;\">Cook and shred chicken. Set aside.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">In a large pot, saut\u00e9 onions in 1-2 T of olive oil over medium heat until translucent (3-4 minutes). Add garlic and saut\u00e9 until fragrant.<\/p>\n<\/li>\n<li>\n<p style=\"white-space: pre-wrap;\">Add chicken broth, drained beans, shredded chicken, salsa, and spices. Bring to a boil, reduce heat and simmer for 5 minutes.
