I usually keep it simple with cherry tomatoes, fresh mozzarella, chopped basil, a drizzle of garlic-infused olive oil, and a sprinkle of salt&#8230;and it&#8217;s honestly so good that I&#8217;m not surprised she loves it so much! My one-year-old son loves it too!<\/p>\n<p>As much as I love cooking, every once in a while I need a night off. This meal feels like a copout because it&#8217;s SO easy to throw together, but it definitely doesn&#8217;t taste that way! Let&#8217;s be honest, is it even possible to go wrong when fresh mozzarella, tomatoes, and basil are involved? Not in my book! And this recipe takes it one step further by adding chicken, avocados, and balsamic. SO good.<\/p>\n<p>I found this recipe on cafedelites.com and the title alone drew me in! I made a few minor tweaks to get it tasting how I wanted, but it was practically perfect from the start. You begin by making your marinade, add a few tablespoons of it to your chicken and put the rest (of the untouched marinade) aside to use as a dressing at the end. Then you cook your chicken until it reaches 165 degrees and let it rest for a few minutes before slicing it. After that, your salad will come together SO quickly. Basically just throw everything else into a bowl, top with your chicken, sprinkle with some salt and drizzle on the remaining dressing. BAM. Dinner is served!<\/p>\n<p><strong>Chicken Avocado Caprese Salad<\/strong><br \/>\nadapted from <em>Cafe Delites<\/em><\/p>\n<p>Ingredients<br \/>\nMarinade\/Dressing:<\/p>\n<ul>\n<li>1\/3 cup balsamic vinegar<\/li>\n<li>1\/4 cup olive oil<\/li>\n<li>2 T brown sugar<\/li>\n<li>1 1\/2 (2 cloves)\u00a0teaspoons fresh garlic. minced<\/li>\n<li>1\/2 teaspoon dried basil<\/li>\n<li>1 1\/2 teaspoons salt<\/li>\n<\/ul>\n<p>Salad:<\/p>\n<ul>\n<li>2 boneless, skinless chicken breasts<\/li>\n<li>5 cups Romaine lettuce, washed\/dried and cut<\/li>\n<li>1 avocado , sliced<\/li>\n<li>1 cup cherry or grape tomatoes, halved<\/li>\n<li>1\/2 cup fresh mozzarella, cut into bite-sized pieces<\/li>\n<li>1\/4 cup basil leaves , thinly sliced<\/li>\n<li>Salt and pepper,\u00a0to taste<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<ol>\n<li>Whisk marinade ingredients together to combine.<\/li>\n<li>Place chicken in a shallow dish and pour 1\/4 c of the marinade over it. Stir it around to ensure all sides are coated.<\/li>\n<li>Reserve the untouched marinade to use as a dressing.<\/li>\n<li>Heat some olive oil in large grill pan or cast iron\/stainless steel skillet over medium-high heat and grill chicken until cooked through (165 degrees). Once the chicken is cooked, set it aside and let it rest for five minutes.<\/li>\n<li>Slice the chicken into strips and assemble the salad with your lettuce, avocado slices, tomatoes, mozzarella cheese, and chicken.
