This recipe is one I make all the time, and we never get sick of it. It&#8217;s quick, easy,\u00a0SO delicious, and makes the yummiest leftovers!\u00a0My kids gobble it up.<\/p>\n<p>Serve it with your favorite salsa and some <strong><a href=\"https:\/\/www.simmerandsliceblog.com\/home\/2018\/5\/8\/fresh-guacamole\" target=\"_blank\" rel=\"noopener\">fresh guacamole<\/a> <\/strong>or try it with sour cream and a drizzle of hot sauce. Oh man. GUYS. Make this. Trust me!<\/p>\n<div class=\"\n          image-block-outer-wrapper\n          layout-caption-below\n          design-layout-inline\n\n        \" data-test=\"image-block-inline-outer-wrapper\"><\/p>\n<p><img decoding=\"async\" class=\"thumb-image\" style=\"font-size: revert; color: initial; font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1521158257908-H0MUXJL08JY2IPT6OZY0\/Baked+Creamy+Chicken+Taquitos\" alt=\"Baked Creamy Chicken Taquitos\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/5a58c601aeb625214fc6d727\/1521158257908-H0MUXJL08JY2IPT6OZY0\/Baked+Creamy+Chicken+Taquitos\" data-image-dimensions=\"2500x1667\" data-image-focal-point=\"0.5,0.5\" data-load=\"false\" data-image-id=\"5aab08332b6a28f6e25b19d2\" data-type=\"image\" \/><span style=\"color: initial; font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif; font-size: revert;\"><strong>Baked Creamy Chicken Taquitos<\/strong><br \/>\n<\/span><span style=\"font-size: revert; color: initial; font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">recipe adapted from <em>Our Best Bites Cookbook<\/em><\/span><\/p>\n<\/div>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 ounces cream cheese<\/li>\n<li>1\/3 cup green salsa<\/li>\n<li>1 tablespoon fresh lime juice (1-2 limes&#8230;I always add extra lime)<\/li>\n<li>1\/2 teaspoon cumin<\/li>\n<li>1 teaspoon chili powder<\/li>\n<li>1\/2 teaspoon onion powder<\/li>\n<li>1 clove garlic, crushed or minced<\/li>\n<li>3 tablespoons fresh cilantro, chopped<\/li>\n<li>2 tablespoons green onions, chopped<\/li>\n<li>2 cups cooked, shredded chicken (bake or boil in chicken broth and then shred)<\/li>\n<li>1 cup shredded Mexican blend or pepper jack cheese<\/li>\n<li>16 6-inch flour tortillas<\/li>\n<li>Nonstick cooking spray<\/li>\n<li>Kosher salt<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Bake or boil chicken, shred, and set aside (I usually just boil my chicken in chicken broth until tender while prepping my filling).<\/li>\n<li>Heat oven to 425\u00baF.<\/li>\n<li>Line a baking sheet with aluminum foil and spray it lightly with cooking spray.<\/li>\n<li>Heat cream cheese in the microwave for 20-30 seconds so it&#8217;s easy to stir.<\/li>\n<li>Add green salsa, lime juice, cumin, chili powder, onion powder, and crushed garlic. Stir to combine.<\/li>\n<li>Add cilantro, green onions, chicken, and pepper jack cheese. Stir to coat chicken.<\/li>\n<li>Wrap 2-3 tortillas at a time in damp paper towels and microwave for 20-30 seconds so they are soft and pliable.<\/li>\n<li>Place 2-3 tablespoons of the chicken mixture on the lower third of each tortilla, keeping it about 1\/2 inch from the edges, and then roll it up.<\/li>\n<li>Place seam-side down on the baking sheet in a single layer. Spray the tops lightly with cooking spray and sprinkle each taquito with a pinch of kosher salt.<\/li>\n<li>Place in the oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.<\/li>\n<li>Cool for 5-10 minutes. Serve with your choice of salsa and <a href=\"https:\/\/www.simmerandsliceblog.com\/home\/2018\/5\/8\/fresh-guacamole\" target=\"_blank\" rel=\"noopener\"><strong>fresh guacamole<\/strong><\/a> or sour cream and hot sauce.<\/li>\n<li>To save as leftovers, wrap each taquito individually in aluminum foil and store in the fridge.
